If your fishmonger hasn’t done so already : Remove any scales on the skin with a fish scaler.
Cut off the head, tail, and fins, if desired. Cut open the belly and remove the guts.

1. Preheat the grill to medium-high heat.
2. Brush the sea bass with olive oil and season it with salt and pepper.
3. Grill the sea bass for 4-5 minutes per side or until the flesh is opaque and flakes easily with a fork.

1. Preheat the oven to 400°F (200°C).
