Preparing lobster

When it comes to preparing lobster, there are a few things you need to know. Most lobsters that you’ll find in supermarkets will have already been cooked and then frozen. This means that all you need to do is thaw them out before you use them. However, if you’re lucky enough to get your hands on a live lobster, you’ll need to cook it yourself.
To cook a live lobster, the most humane way is to place it in the freezer for 30 minutes before boiling. Once it is dead, bring a large pot of heavily salted water to a boil, then add the lobster and cook for about 12-15 minutes, depending on the size. The shell should turn bright red and the meat should be firm and opaque.
