Cooking eggplants in a pan. Sautéed eggplants (eggplants cooked in a pan) are a quick and easy option: you only need a skillet with a little bit of oil and your favorite seasonings.
1. Dice 2 medium eggplants. The cubes should be around ½-inch.
2. Place the eggplant cubes in a colander, and sprinkle them with salt. Let them sit for 30 minutes to release excess moisture. Then, rinse the eggplant cubes, and pat them dry with a paper towel.
3. Heat ¼ cup of olive oil in a large skillet over medium-high heat.
4. Add the eggplant cubes and cook for 6 to 8 minutes, until golden brown.
5. Optional: add garlic, basil and/or grated Parmesan cheese.
Air fryer eggplants
Cooking eggplants with an air fryer is decidedly easy
1. Preheat your air fryer at 375°F (190°C)
2. Cut the eggplants into chucks (around 1 inch in size) and place them in the air fryer basket. Add garlic (either fresh or powdered) if you want
3. Cook for 20 minutes. Enjoy!
