1. Rinse 1 cup of black-eyed peas and sort through to remove any debris. Soak the peas overnight in 4 cups of water, or for at least 6 hours, to help reduce the cooking time.
2. Drain the soaked peas and transfer them to a pot. Add 3 cups of water and bring to a boil.
3. Reduce the heat to a low simmer, cover the pot and let cook for 45 to 60 minutes, or until the peas are tender. Season with salt and pepper to taste.
If you didn’t soak the peas, boil for 1-2 hours instead (or until they’re tender).
